Hi Barry, thanks for catching this, I’ve updated the post. As for the bacon, you can scatter all the bacon on the casserole or if you like reserve half of the bacon to serve on the side.

She is in her eaarly 50s and has always loved to eat a dill pickle a with a banana since she was a kid. She likes peanut butter and banana too. This dish might even make it past her older brother who was never keen on her taste choices. I would not share the ingredients with the family till after the meal though.

Hi Allie – So glad to hear that you and your friends like the dish. Having once resided in NOLA myself, I usually give my plate a good splash of Tobasco, so red pepper flakes sound perfect. I looked it up and found your site. Just made it for my friends and they all loved it. I am from New Orleans and of Cajun descent, so next time I think I will a few red pepper flakes to give it a bit of a kick and balance some of the sweetness.

Jess I really think the girls would enjoy making and eating this. You guys as well. This was actually one of my most favorite post to write. Living thousands of miles from your grown kids and grandkids makes it hard to cook together. But, this way I can reach out to them as if I was there. I plan to do some more post in this fashion. Maybe a “Kalkon & Blåbär Flygande Jacob” (Turkey & Blueberry Flying Jacob). That’s an interesting flavor combination that I’ll have to try next time around.

But, coincidentally, I had a ton of bananas recnetly, and to use them up, I made sandwiches with banana, turkey, blueberry, and mayo. And I loved it! So, if I could love that, I’ve got to try this.
