This is a gorgeous presentation, Ron and a lovely recipe with excellent instructions. I would serve this dish in a fine dining restaurant. I agree with your analysis of a good fish monger – it should smell clean – we are lucky to be in walking distance of an excellent fish shop. Everything about your recipe appeals to me. Being landlocked our last 10 years in the US we had to depend on the local Kroger fish counter. Maybe that’s why I enjoy our local fish markets so much. We even have a mobile fishmonger in Lund (16 minutes by train) that’s come to the market square on Tuesday and Thursdays. Yes, the number system is fine with me. Thanks for the read Frank.

Sadly fishmongers, proper or not, are a dying breed here in the States, as you probably know. We need to make do with seafood counters at the supermarket staffed with people who sometimes know their trade, sometimes not. And I do wish they’d use that number system! That would make life so much simpler.

I’ve used bread crumbs (traditional) and panko and I prefer panko. Those little fish rolls are very good, to the point I plan to just make some of the rolls and serve them on a lemon rice and orzo pilaf.
